Ingredients

Apple cider mimosas base
  • 2 cup apple cider chilled
  • 1 bottle (750 ml) champagne or prosecco chilled
  • 2 tbsp sugar
  • 1 tsp ground cinnamon
  • 1 apple thinly sliced
  • 1 cinnamon sticks for garnish

Method

Make the cinnamon sugar rim
  1. Mix sugar and ground cinnamon on a small plate.
  2. Wet the rims of the flutes with chilled apple cider and dip them in the cinnamon sugar.
Build the mimosas
  1. Fill each flute one third full with chilled apple cider.
  2. Top each flute with chilled champagne or prosecco.
  3. Garnish each drink with a thin apple slice and a cinnamon stick, then serve.

Notes

For clean rim coverage, chill both the cider and sparkling wine and keep the flutes cold until dipping. Store leftovers covered in the refrigerator up to 1 day; the bubbles will fade, so re-sparkling isn’t recommended. To keep it dairy-free and lighter, use a brut-style prosecco and reduce sugar for a less sweet rim.
