Ingredients

Cranberry Brie Bites
  • 1 sheet puff pastry thawed
  • 8 oz brie cut into 24 small cubes
  • 0.5 cup whole berry cranberry sauce
  • 0.25 cup pecans finely chopped
  • 1 tbsp honey
  • 1 fresh rosemary sprigs for garnish

Equipment

  • 1 sheet pan
  • 1 cast iron skillet
  • 1 Dutch oven

Method

Prep
  1. Preheat the oven to 375F and grease a 24-cup mini muffin tin.
  2. Roll the puff pastry lightly and cut into 24 squares, then press each square into a muffin cup.
Assemble and Bake
  1. Place 1 cube of brie into each pastry cup and top each with 1 teaspoon whole berry cranberry sauce.
  2. Sprinkle chopped pecans over each bite.
  3. Bake for 13-15 minutes, until the pastry is puffed and golden and the brie is melted.
Finish
  1. Cool the bites for 5 minutes in the tin.
  2. Drizzle honey over the bites and garnish with fresh rosemary sprigs.

Notes

For clean, evenly sized cups, press the pastry squares firmly into the tin so they don’t lift while baking. Store leftovers covered in the refrigerator up to 2 days; rewarm at 350F for 5-7 minutes to re-melt the brie. For a dairy-light option, swap brie with a plant-based brie-style cheese that melts similarly.
