Method
Prep and preheat
- Preheat the oven to 400F and line a sheet pan with parchment paper.
- Roll the thawed puff pastry into a 10x12-inch rectangle, then cut into 12 strips about 1 inch wide.
Assemble bundles
- Spread a thin layer of herb cheese on each pastry strip, then sprinkle with Parmesan and black pepper.
- Wrap each asparagus spear with a half slice of prosciutto.
- Wind a pastry strip in a spiral around each wrapped spear with the cheese side in, then place the bundles on the prepared sheet pan.
- Brush the pastry with the egg wash.
Bake and finish
- Bake for 16-18 minutes at 400F, until the pastry is puffed and deep golden brown.
- Finish immediately with lemon zest and flaky sea salt, then serve warm.
Notes
For the cleanest spirals, keep the pastry strips even and handle them gently so the layers stay distinct. Store leftovers in the refrigerator up to 3 days; reheat on a sheet pan in a 350F oven until warmed through and crisp at the edges. Freezing isn’t recommended because the pastry texture can soften after thawing. For a dairy-forward swap, use a similar flavored spread and Parmesan-style vegetarian alternative if needed for a lighter or vegetarian-style version.
