Ingredients

Sirloin steak
  • 1.5 lb sirloin steak
Vegetables
  • 2 bell peppers sliced
  • 1 onion sliced
  • 2 cup corn kernels
  • 4 garlic minced
  • green onions for garnish
Sauce
  • 3 tbsp oil
  • 0.25 cup soy sauce
  • 2 tbsp BBQ sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • salt and pepper to taste

Equipment

  • 1 cast iron skillet

Method

Sear the steak
  1. Heat a griddle to high heat and add oil. Season the sirloin steak with salt and pepper, then cook for 3-4 minutes until seared and set aside.
Cook the vegetables
  1. Add bell peppers and onions to the griddle and cook for 5-6 minutes, stirring occasionally, until softened.
Finish with corn and garlic
  1. Add corn kernels and garlic to the griddle and cook for 2 minutes, stirring to combine and heat through.
Sauce and toss
  1. Combine soy sauce, BBQ sauce, Worcestershire sauce, and brown sugar, then pour over the vegetables. Return steak to the griddle and toss for 2-3 minutes until everything is coated and hot.
Garnish
  1. Turn off the heat and garnish with green onions for serving.

Notes

Pro tip: keep the griddle at high heat so the steak sears quickly before the vegetables release moisture. Refrigerate leftovers in a sealed container for up to 3 days; reheat in a hot skillet or on the griddle until warmed through. Freezing is not recommended because peppers and corn can soften too much. For a lighter option, use low-sodium soy sauce and reduce the brown sugar by 1 tablespoon.
