Ingredients

Cranberry sauce
  • 12 oz fresh cranberries Use fresh, not frozen, for the best burst-and-thicken texture.
  • 0.75 cup sugar
  • 0.5 cup ruby port or red wine Choose port for deeper flavor; red wine works too.
  • 0.25 cup orange juice
  • 2 tbsp Grand Marnier or orange liqueur Stir in off the heat to keep the aroma.
  • 1 cinnamon stick
  • 1 tsp orange zest
  • 0.25 tsp salt Use a pinch—just enough to sharpen the fruit flavor.

Equipment

  • 1 cast iron skillet

Method

Cook the cranberry base
  1. In a saucepan, combine sugar, ruby port or red wine, orange juice, cinnamon stick, and salt, then bring to a boil over medium-high heat with a glossy bubbling surface (about 2–3 minutes).
  2. Add fresh cranberries, then reduce to a steady simmer and cook for 10–12 minutes until the berries burst and the sauce thickens, with occasional thickened trails when stirred.
Finish and chill
  1. Remove from heat and stir in Grand Marnier or orange liqueur and orange zest, creating a deeper ruby color and a bright citrus aroma.
  2. Discard the cinnamon stick, leaving the sauce smooth and evenly speckled with berry skins.
  3. Cool to room temperature for 15–20 minutes, then chill until set before serving, which gives it a spoonable, gelled texture.

Notes

Pro tip: simmer until you see multiple berries burst and the sauce coats the back of a spoon—then stop, since it thickens further as it cools. Refrigerate in a covered container up to 5 days; freeze for up to 2 months. For a less boozy option, replace port/wine + Grand Marnier with additional orange juice (add in 2 tbsp extra at the finish) while keeping the simmer time the same.
