Boursin Orzo Bake

Ingredients
  

  • 1 cup orzo pasta
  • 2 cups cherry tomatoes halved
  • 2 cups fresh spinach roughly chopped
  • 1 package Boursin cheese garlic and herb (5.2 oz)
  • 1/2 cup grated Parmesan cheese plus extra for topping
  • 1 cup shredded mozzarella cheese
  • 2 cups chicken or vegetable broth
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Cook orzo in salted boiling water for 2 minutes less than package directions. Drain and rinse with cold water. Set aside.
  2. In a large oven-safe skillet or saucepan, heat olive oil over medium heat. Add garlic and cook for 1 minute until fragrant. Add cherry tomatoes and cook for 3 to 4 minutes until beginning to soften.
  3. Add spinach and cook for 2 minutes until wilted. Season with salt and pepper.
  4. Remove from heat. Add orzo, Boursin, Parmesan, and mozzarella to the pan. Pour in broth and stir everything together until the Boursin is mostly melted and evenly distributed.
  5. Transfer to a greased baking dish if not already oven-safe. Sprinkle extra Parmesan over the top. Cover tightly with foil.
  6. Bake covered for 25 minutes. Remove foil and bake for another 10 to 15 minutes until the top is golden and bubbling.
  7. Rest for 5 minutes before serving. Garnish with fresh basil.

Notes

Undercook the orzo slightly before baking since it continues cooking in the broth. Keep the foil sealed tight during the covered bake to trap steam. If the dish looks dry after the covered bake, stir in a small splash of extra broth before removing the foil.
