Prep and preheat
- Preheat the oven to 400°F and grease a 9x13 baking dish with a light coat. Set it aside so it’s ready when the beef layer finishes cooking.
Brown the beef
- In a skillet, brown the ground beef with the diced onion until the beef is no longer pink. Drain off excess fat so the casserole doesn’t get greasy.
- Stir in the minced garlic, ketchup, yellow mustard, Worcestershire sauce, salt, and pepper. Cook for 30–60 seconds until fragrant and evenly combined.
Make the cheesy beef layer
- Stir in the cheddar cheese soup and sour cream until smooth. Keep stirring until no streaks remain and the mixture looks glossy.
- Transfer the cheesy beef mixture to the greased baking dish. Spread it into an even layer so the fries bake uniformly.
Top and bake
- Top with 1.5 cups shredded cheddar and arrange the frozen french fries in a single layer over the cheese. Press lightly so the fries sit flat and touch the layer underneath.
- Bake at 400°F for 35–40 minutes, until the fries are golden and crispy. You should see crisp edges and a browned, crunchy top.
- Scatter the remaining shredded cheddar over the fries and bake for 5 more minutes. Bake just until the cheese melts and looks bubbly on top.
- Serve the casserole with dill pickle slices. Cut into portions after a brief rest so it holds together when scooped.
Notes
Pro tip: for the crunchiest top, keep the frozen fries in a single layer with minimal overlap so steam can escape during the bake. Refrigerate leftovers in an airtight container for up to 3 days; reheat at 350°F until warmed through and crisp again. Freezing is not recommended because fries lose texture, but you can refrigerate and reheat for best results. For a lower-fat swap, use reduced-fat cheddar cheese soup and sour cream while keeping the same bake times.
