Ingredients

Cheesy chicken bacon ranch taco filling
  • 1.5 lb chicken breast Slice thin for faster even cooking.
  • 8 bacon Cook until crisp, then crumble.
  • 1 packet (1 oz) ranch seasoning mix Divide the packet; use half for chicken and the rest to dust tacos at the end.
  • 8 flour tortillas Fold in half and griddle until crisp and hot.
  • 1.5 cup sharp cheddar Shred for easy melting inside the tortilla.
  • 1 cup romaine lettuce Shred for easy spooning into tacos.
  • 1 cup cherry tomatoes Halve for juicy bite-sized pieces.
  • 0.25 cup red onion Dice small for even distribution.
  • 2 tbsp olive oil Used for searing chicken in the skillet.
  • 0.33 cup Ranch dressing For drizzling over assembled tacos.

Equipment

  • 1 cast iron skillet

Method

Cook the ranch chicken
  1. Season the sliced chicken with half the ranch seasoning mix.
  2. Heat olive oil in a cast iron skillet over medium-high heat, then cook chicken for 4-5 minutes per side until cooked through, flipping once for even browning.
  3. Rest the cooked chicken briefly, then slice again if needed so the filling is bite-sized.
Griddle the crispy tortilla shells
  1. Fold each flour tortilla in half, then place in a dry cast iron skillet over medium heat.
  2. Griddle until crispy on both sides, 2-3 minutes total, and add cheddar so it melts inside during the final moments.
Assemble and finish
  1. Fill each crispy taco shell with ranch chicken, bacon, romaine lettuce, cherry tomatoes, and red onion.
  2. Drizzle with ranch dressing, then dust with the remaining ranch seasoning mix to finish.

Notes

Pro tip: slice chicken thin so it cooks in the 4–5 minute-per-side window without drying out. Refrigerate leftovers in an airtight container up to 3 days; keep tortillas separate so they stay crisp. Freezing isn’t recommended because tortillas lose their crunch when thawed. For a lower-fat swap, use turkey bacon and reduced-fat cheddar while keeping the same ranch seasoning.
