Ingredients
  

Ground beef cabbage stir-fry base
  • 1 lb ground beef
  • 0.5 head green cabbage thinly shredded (about 4 cups)
  • 1 cup shredded carrots
  • 4 clove garlic minced
  • 1 tbsp fresh ginger grated
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp hoisin sauce
  • 1 tsp sriracha
  • 2 tbsp vegetable oil
  • 0.25 green onions for garnish
  • 1 tbsp sesame seeds for garnish

Method
 

Brown the beef
  1. Heat 2 tablespoons vegetable oil in a large wok or skillet over high heat and cook ground beef, breaking apart, until browned, about 8–10 minutes; drain excess fat.
  2. Add minced garlic and grated fresh ginger and cook for 30 seconds, stirring constantly, until fragrant.
Stir-fry cabbage and carrot
  1. Add thinly shredded green cabbage and shredded carrots and stir-fry for 3–4 minutes over high heat until just wilted but still slightly crisp, with bright color.
Coat with egg roll sauce
  1. Drizzle soy sauce, sesame oil, rice vinegar, hoisin sauce, and sriracha over the top and toss to coat, scraping up any browned bits.
  2. Cook for 1–2 more minutes until everything is fragrant and fully combined, with the sauce looking glossy.
Finish and serve
  1. Garnish with sliced green onions and sesame seeds, then serve as is or over rice.

Notes

For the best texture, keep the cabbage slightly crisp by stopping the stir-fry as soon as it wilts and turns glossy. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a skillet until hot. Freezing: no (cabbage can soften too much). For a keto dinner swap, serve over cauliflower rice or skip rice entirely to keep it low carb.
