Brown the beef
- Heat 2 tablespoons vegetable oil in a large wok or skillet over high heat and cook ground beef, breaking apart, until browned, about 8–10 minutes; drain excess fat.
- Add minced garlic and grated fresh ginger and cook for 30 seconds, stirring constantly, until fragrant.
Stir-fry cabbage and carrot
- Add thinly shredded green cabbage and shredded carrots and stir-fry for 3–4 minutes over high heat until just wilted but still slightly crisp, with bright color.
Coat with egg roll sauce
- Drizzle soy sauce, sesame oil, rice vinegar, hoisin sauce, and sriracha over the top and toss to coat, scraping up any browned bits.
- Cook for 1–2 more minutes until everything is fragrant and fully combined, with the sauce looking glossy.
Finish and serve
- Garnish with sliced green onions and sesame seeds, then serve as is or over rice.
Notes
For the best texture, keep the cabbage slightly crisp by stopping the stir-fry as soon as it wilts and turns glossy. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a skillet until hot. Freezing: no (cabbage can soften too much). For a keto dinner swap, serve over cauliflower rice or skip rice entirely to keep it low carb.
