Ingredients
  

English muffins
  • 12 English muffins Split into muffin halves.
Eggs
  • 12 eggs Crack one egg per muffin tin cup.
  • 0.5 tsp Salt and pepper to taste Season to your preference; keep portions even across sandwiches.
Sausage
  • 12 breakfast sausage patties (or bacon slices) Cook according to package directions; set aside.
Cheese
  • 12 American or cheddar cheese slices Use American for maximum melt; slice thickness should fit the muffin.
Cooking fat & spray
  • 1 tbsp Butter for cooking eggs Helps eggs release and improves browning.
  • 1 tsp Cooking spray Grease muffin tin for easy removal.

Method
 

Cook sausage
  1. Cook breakfast sausage patties (or bacon slices) according to package directions, then set aside.
Bake the eggs
  1. Spray a muffin tin with cooking spray and crack one egg into each cup, breaking yolks if desired.
  2. Season eggs with salt and pepper and bake at 350°F for 12-15 minutes until set.
Toast the muffins
  1. Toast English muffins lightly so they hold up after freezing and reheating.
Assemble & freeze
  1. Assemble sandwiches by layering muffin bottom, egg, sausage patty, cheese slice, then muffin top.
  2. Wrap each sandwich individually in plastic wrap, then place in freezer bags.
  3. Freeze for up to 3 months; to reheat, unwrap and microwave for 1-2 minutes until heated through.
