Prep and caramelize
- Preheat your oven to 375°F with a rack in the middle. Set out a large oven-safe skillet for the next steps.
- Melt the butter in a large oven-safe skillet over medium heat. Add the onions and cook 30–35 minutes, stirring occasionally, until deeply caramelized and browned at the edges.
Build the flavor
- Add the garlic and dried thyme and cook for 2 minutes, stirring so it doesn’t brown. The mixture should smell fragrant.
- Pour in the wine and cook for 2 more minutes. Let the liquid reduce slightly so the onions keep their deep flavor.
- Add the beef broth, Worcestershire sauce, and uncooked orzo, then stir to combine and distribute the pasta. Stir in the diced chicken until evenly mixed throughout.
Simmer and assemble
- Bring the mixture to a simmer over medium heat. Stir until the orzo starts absorbing liquid.
- Reduce to maintain a gentle simmer and stir in the cubed cream cheese until fully melted and creamy. Keep stirring until the sauce looks smooth.
- Season with salt and pepper to taste. Scatter the shredded Gruyere evenly over the top so it forms a golden crust while baking.
Bake
- Bake at 375°F for 25–30 minutes, uncovered. Bake until the orzo is cooked through, the chicken is done, and the cheese is golden and bubbly.
- Finish by garnishing with fresh thyme. Let the casserole rest for 5 minutes so it thickens slightly before serving.
Notes
Pro tip: slice the onions thin and give them the full 30–35 minutes so you get that deep French-onion sweetness before the orzo goes in. Refrigerate leftovers in a sealed container for up to 3 days; reheat in a 350°F oven until hot. Freezing is not recommended because the cream cheese sauce can separate when thawed. For a lighter swap, use reduced-fat cream cheese and reduce the Gruyere to 1 cup while keeping the same bake time.
