Sear and caramelize
- Preheat oven to 325F, then heat olive oil in a Dutch oven over high heat and sear the chuck roast until deeply browned, 6-8 minutes per side. Transfer the roast to a plate.
- In the same Dutch oven, melt butter and cook the thinly sliced onions over medium-low heat for 30-35 minutes, stirring occasionally, until deeply caramelized. Scrape up any browned bits as the onions cook.
- Add minced garlic to the onions and cook for 30-60 seconds until fragrant, then pour in the wine to deglaze, scraping the bottom until the liquid is slightly reduced, about 2-3 minutes.
Braise until fall-apart tender
- Add beef broth, Worcestershire sauce, fresh thyme, and bay leaves to the pot and stir to combine. Return the roast to the broth.
- Cover and braise in the oven at 325F for 3 to 3-1/2 hours, until the beef is fall-apart tender. Check once near the end and ensure liquid level stays around halfway up the roast.
- Remove bay leaves, then shred the beef in the broth with two forks, stirring to distribute the onions and juices evenly.
Finish with cheesy baguette
- Ladle the pot roast and broth into bowls, then float the toasted baguette slices on top. Sprinkle shredded Gruyere evenly over the baguette.
- Broil for 3-4 minutes until the cheese is golden and bubbly, then serve hot.
Notes
Pro tip: carve through the roast right in the Dutch oven once it’s tender—shredding in the broth helps the onions and Gruyere gravy cling to the beef. Refrigerate covered for 3-4 days; reheat gently on the stove, adding a splash of broth if thickened. Freeze up to 2-3 months (freeze the pot roast mixture; broil fresh baguette and cheese after thawing). For a lower-sodium option, use reduced-sodium beef broth and choose a Worcestershire sauce marked lower sodium if available.
