Ground beef
  • 1.5 lb ground beef
  • 3 clove garlic minced
  • 1 tsp ginger grated
Hot honey glaze
  • 3 tbsp honey
  • 1 tbsp sriracha
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 0.5 tsp red pepper flakes
Bowl base and toppings
  • 2 cup cooked white rice
  • 1 avocado sliced
  • 1 cucumber thinly sliced
  • 1 pickled jalapeños optional
  • 1 sesame seeds for garnish
  • 1 green onions for garnish

Method
 

Brown and glaze the beef
  1. Brown ground beef in a skillet over medium-high heat, breaking apart, then drain excess fat. Cook until the beef is browned and no longer pink.
  2. Add garlic and ginger and cook for 30 seconds, stirring until fragrant. Keep heat at medium-high so they lightly sizzle without burning.
  3. Whisk honey, sriracha, soy sauce, rice vinegar, and red pepper flakes, then pour the hot honey glaze over the beef and toss. Cook for 2–3 minutes until the sauce thickens and turns glossy, with caramelized bits clinging to the meat.
Assemble the bowls
  1. Assemble bowls by adding cooked white rice as the base. Fluff and spread it so the toppings sit on top.
  2. Spoon the hot honey beef over the rice. Add enough to create a colorful, saucy mound.
  3. Top with sliced avocado and thinly sliced cucumber. Arrange them for contrasting creamy and crisp textures.
  4. Add pickled jalapeños if using. Scatter them for bright heat and a tangy pop.
  5. Drizzle any remaining pan sauce over the bowl and finish with sesame seeds and green onions. Garnish right before serving so the sesame stays visible.

Notes

For maximum sauce cling, keep cooking the glazed beef until it looks thick and glossy, then serve immediately over warm rice. Refrigerate leftovers in a sealed container up to 3 days; reheat beef and sauce in a skillet over medium until hot, and assemble fresh bowls. Freezing is not recommended for the best avocado and cucumber texture. If you want a dairy-free, swap the rice bowl base to cauliflower rice for a lighter, lower-carb option.
