Roast the taco potatoes
- Preheat the oven to 425F, then line a sheet pan. Cue: oven racks should be centered for even browning.
- Toss the cubed Yukon gold potatoes with taco seasoning and olive oil until evenly coated. Cue: potatoes look evenly speckled with seasoning and glossy with oil.
- Roast for 25-30 minutes, flipping once halfway through, until crispy and golden. Cue: edges should be browned and the surface should look dry-crisp.
Cook the taco beef
- Brown the ground beef in a skillet over medium-high heat until no longer pink. Cue: beef releases moisture and develops browned crumbles.
- Add taco seasoning and water, then simmer for 3 minutes until thickened. Cue: sauce clings lightly to the beef.
Assemble loaded taco bowls
- Add crispy potato cubes to the bottom of 4 bowls. Cue: use the largest crispy pieces first.
- Top with taco beef, then spoon on warmed black beans and corn. Cue: layers should be visible between the beans and corn.
- Load with shredded cheddar, sour cream, pico de gallo, avocado, jalapeño, and cilantro. Cue: cheddar should start to melt slightly from the heat.
- Finish with a squeeze of lime over the top and serve immediately. Cue: lime juice adds a fresh glossy shine.
Notes
Pro tip: cut the potatoes to uniform 1-inch cubes and avoid overcrowding the sheet pan so they roast crisp instead of steaming. Store leftovers in the fridge up to 3 days, but keep toppings (especially avocado and sour cream) separate for best texture; reheat potatoes and beef, then assemble fresh. Freezing is not recommended for assembled bowls, but roasted potatoes and taco beef freeze well separately up to 2 months. For a lighter option, swap ground beef for lean turkey and use reduced-fat cheddar.
