Prep and bake
- Preheat the oven to 350°F and grease a 9x5 loaf pan.
- Whisk the mashed bananas, melted butter, maple syrup, egg, and vanilla until smooth.
- Fold in the all-purpose flour, baking soda, cinnamon, nutmeg, and salt until just combined.
- Fold in the chopped pecans or walnuts until evenly distributed.
- Pour the batter into the prepared loaf pan and place it in the oven.
- Bake for 60–70 minutes at 350°F, until the top is deep golden and a toothpick comes out clean.
- While the loaf is still hot, brush the top with 1–2 tablespoons of warm maple syrup.
- Cool for 15 minutes in the pan before unmolding.
Notes
Pro tip: Mash the bananas very well so the loaf bakes up with a soft, even crumb (no dry pockets). Store wrapped at room temperature for up to 2 days or in the fridge for 5 days; freeze slices for up to 2 months. For a dairy-light option, replace the melted butter with neutral oil (use the same amount).
