Ingredients

Oat balls base
  • 1.5 cup old-fashioned rolled oats Use rolled oats for the best chewy texture.
  • 0.5 cup pumpkin puree Blot very dry to prevent loose bites.
  • 0.33 cup almond butter or peanut butter Any nut/seed butter works for binding.
  • 0.2 cup maple syrup or honey For sweetness and moisture.
  • 0.25 cup ground flaxseed Helps the mixture firm up when chilled.
  • 2 tsp pumpkin pie spice Adds classic warm fall spice flavor.
  • 1 tsp cinnamon Balances the pumpkin and adds aroma.
  • 1 tsp vanilla Rounds out sweetness.
  • 0.25 tsp salt Enhances overall flavor.
  • 0.33 cup mini chocolate chips or white chocolate chips Fold in for melty-sweet bites.

Method

Blot and mix
  1. Blot the pumpkin puree very dry to remove excess moisture and prevent soft bites.
  2. In a mixing bowl, combine old-fashioned rolled oats, pumpkin puree, almond butter or peanut butter, maple syrup or honey, ground flaxseed, pumpkin pie spice, cinnamon, vanilla, and salt, then stir until fully mixed and evenly speckled.
  3. Fold in the mini chocolate chips or white chocolate chips until distributed throughout the mixture.
Chill and roll
  1. Refrigerate the mixture for 20 minutes until firm enough to roll.
  2. Scoop into tablespoon-sized balls, then roll each one in cinnamon sugar until coated.
  3. Refrigerate until firm, then serve chilled or store for later.

Notes

Pro tip: blotting the pumpkin puree is the difference between firm bites and a sticky, loose mixture. Store in an airtight container in the fridge for up to 1 week; these do not need to be frozen. For a nut-free option, use sunflower seed butter instead of almond or peanut butter.
