Prep and heat
- Preheat the oven to 350°F and grease a 9x5 loaf pan.
- Whisk all-purpose flour, baking soda, baking powder, salt, and cinnamon together in one bowl.
Mix wet ingredients
- Beat granulated sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Stir in crushed pineapple and grated zucchini until evenly distributed.
Combine and bake
- Fold the dry ingredients into the wet ingredients until just combined, folding in shredded sweetened coconut if using.
- Pour the batter into the loaf pan and bake for 55–65 minutes, until a toothpick comes out clean.
Cool and glaze
- Cool the loaf for 15 minutes before glazing.
- Mix powdered sugar with the reserved pineapple juice and drizzle the glaze over the warm loaf before serving.
Notes
For best texture, squeeze grated zucchini very dry so the loaf stays moist but not gummy. Store wrapped at room temperature up to 2 days or refrigerate up to 5 days; freeze slices up to 2 months. For a lighter option, replace vegetable oil with an equal amount of unsweetened applesauce (same volume) for a less rich crumb.
