Salted Caramel Pretzel Bark

Salted caramel pretzel bark is a quick American dessert where pretzels are topped with a quick 3-minute caramel, then covered with melted chocolate for a glossy, set slab. Finished with flaky sea salt (and optional white chocolate drizzle), it bakes fast and hardens in about an hour for easy break-apart pieces.

Ingredients

Pretzel base and caramel
  • 4 cup mini pretzels Use mini pretzels for even coverage.
  • 1 cup unsalted butter Prefer butter sticks for easy measuring.
  • 1 cup brown sugar, packed Pack firmly for proper caramel thickness.
Chocolate layers
  • 2 cup semi-sweet chocolate chips Scattered over hot caramel to melt and spread smoothly.
  • 1 cup dark chocolate chips Use for a deeper chocolate flavor and firmer bark.
  • 0.5 cup white chocolate Optional drizzle only; omit if not using.
Topping
  • 0.25 flaky sea salt Sprinkle generously while chocolate is still settable.

Equipment

  • 1 sheet pan
  • 1 saucepan

Method

Prep the pan
  1. Preheat the oven to 350F, then line a 15x10 rimmed baking sheet with foil and spray with cooking spray so the bark releases cleanly.
  2. Spread the mini pretzels in a single layer on the lined sheet, then set aside.
Make the caramel and bake
  1. Melt the unsalted butter and packed brown sugar in a saucepan over medium heat, stirring only until combined and then bring to a boil.
  2. Cook the caramel exactly 3 minutes without stirring so it thickens and stays glossy.
  3. Pour the caramel evenly over the pretzels to coat them in a single layer.
  4. Bake for 5 minutes, then remove from the oven immediately when the surface looks hot and bubbly.
Add chocolate and salt
  1. Immediately scatter the semi-sweet chocolate chips and dark chocolate chips over the hot caramel and let them sit for 2 minutes to soften.
  2. Spread the melted chocolate over the caramel using a spatula until smooth, letting any streaks level out.
  3. Sprinkle generously with flaky sea salt across the entire surface for a bold salted crunch.
  4. Drizzle with white chocolate if using, then refrigerate for 1 hour until the bark is fully set.
Finish and serve
  1. Break the bark into pieces and serve.

Notes

Pro tip: Don’t stir the caramel after it comes to a boil—cook exactly 3 minutes for the right thickness before baking. Store covered in the refrigerator up to 5 days; freezer yes (up to 2 months) for longer storage. For a dairy-free swap, use a dairy-free butter alternative and dairy-free chocolate chips (texture may vary slightly).
