Ingredients

Spiced cider
  • 1 cup apple cider
  • 2 cinnamon sticks
  • 2 star anise
  • 3 whole cloves
  • 2 tbsp brown sugar
To finish
  • 1 bottle (750 ml) prosecco chilled
  • 1 apple thinly sliced
  • 1 cinnamon sugar for the rims

Method

Simmer the spiced cider
  1. In a saucepan, simmer apple cider, cinnamon sticks, star anise, whole cloves, and brown sugar for 10 minutes, until fragrant. Keep the mixture at a gentle simmer, with a steady steam rising from the surface.
Strain and chill
  1. Strain the spiced cider through a fine strainer and chill completely. Refrigerate until cold, about 1-2 hours (or longer) for the best flavor blending.
Assemble and serve
  1. Rim tall champagne flutes with cinnamon sugar. Dip the rim lightly so the sugar adheres in an even, visible ring.
  2. Pour 2 tablespoons of spiced cider into each flute. Add enough to coat the bottom and create a spiced base for the bubbles.
  3. Top each flute with chilled prosecco and garnish with an apple slice, then serve immediately. Watch for the drink to turn lightly golden as the cider meets the bubbly.

Notes

Pro tip: Chill the spiced cider completely before building the drinks so the prosecco stays bright and fizzy. Store leftover spiced cider in the refrigerator up to 3 days; freeze is yes (up to 1 month) for quick future batches. For a lighter version, replace brown sugar with an equal amount of a sugar substitute suitable for hot liquids (use to taste).
