Taco Dip with Ground Beef

Ingredients
  

  • -For the Dip:
  • 1 lb ground beef 80/20
  • 1 packet taco seasoning about 1 oz
  • 2/3 cup water
  • 8 oz cream cheese softened to room temperature
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • -Fresh Toppings:
  • 1 cup shredded iceberg lettuce
  • 1 cup diced Roma tomatoes
  • 1/2 cup sliced black olives
  • Tortilla chips for serving

Method
 

  1. In a skillet over medium heat, brown the ground beef for 6 to 8 minutes, breaking it up as it cooks. Drain excess grease.
  2. Add taco seasoning and water to the beef. Stir to combine and simmer for 5 minutes until the liquid is mostly absorbed. Remove from heat and let cool for 5 minutes.
  3. In a bowl, mix softened cream cheese and sour cream together until smooth. Spread evenly across the bottom of a 9x9 dish or shallow serving bowl.
  4. Spoon cooled seasoned beef over the cream cheese layer and spread evenly. Sprinkle shredded cheddar over the beef.
  5. Cover and refrigerate for at least 30 minutes.
  6. Just before serving, top with shredded lettuce, diced tomatoes, and sliced olives. Serve with tortilla chips.

Notes

Let the beef cool before adding it to the cream cheese layer or it will melt and collapse the base. Add fresh toppings right before serving so the lettuce stays crisp. Can be assembled a day ahead without the fresh toppings.
