Ingredients

For fudgy brownies
  • 1 cup unsalted butter Unsalted.
  • 8 oz dark chocolate Use dark chocolate bars/chips.
  • 1.5 cup sugar
  • 4 eggs
  • 2 tsp vanilla
  • 1.25 cup flour
  • 0.5 cup cocoa Unsweetened cocoa powder.
  • 0.5 tsp salt Fine salt.
For turtle topping
  • 0.5 cup thick caramel sauce For swirling.
  • 1.5 cup pecan halves Toast before pressing into brownies.
  • 0.5 cup semi-sweet chocolate chips Melted for drizzle.
  • 0.25 tsp flaky sea salt For finishing.

Equipment

  • 1 sheet pan
  • 1 Dutch oven

Method

Preheat and line the pan
  1. Preheat oven to 350F and line a 9x13 pan with parchment paper.
  2. Set the lined pan aside while you prepare the brownie batter.
Make the fudgy brownie batter
  1. Melt the unsalted butter and dark chocolate together, then cool until warm but not hot.
  2. Whisk in the sugar, eggs, and vanilla until smooth and glossy.
  3. Fold in the flour, cocoa, and salt until no dry streaks remain, scraping the bottom and sides of the bowl.
Assemble and bake
  1. Spread the batter evenly in the prepared 9x13 pan.
  2. Drizzle thick caramel sauce over the top and swirl with a knife for a marbled look.
  3. Press the toasted pecan halves across the surface so they slightly set into the batter.
  4. Bake for 28-32 minutes, until set with moist crumbs in the center.
Finish
  1. Cool completely so the topping sets before slicing.
  2. Drizzle the melted semi-sweet chocolate chips over the cooled brownies.
  3. Sprinkle flaky sea salt over the top for a crisp, salty finish.

Notes

Pro tip: swirled caramel bakes up best when the chocolate-butter mixture is cooled before adding eggs—this helps prevent grainy batter. Store airtight in the refrigerator up to 5 days; freeze baked brownies up to 2 months (freeze without the final salt drizzle if you want it extra crisp). For a gluten-free swap, use a 1:1 gluten-free flour blend in place of flour.
