  • 3 ripe bananas Mash until completely smooth.
Flour
  • 1.5 cup self-rising flour If using all-purpose flour, add baking powder and salt as specified in the recipe notes.
Sweetener
  • 3 tbsp honey or sugar Use honey or granulated sugar.

Method
 

Prep and bake
  1. Preheat the oven to 350°F and grease a 9x5 loaf pan or an 8x8 square pan.
  2. Mash the bananas as completely smooth as possible, using ripe bananas for the sweetest bread.
  3. Stir the honey (or sugar) into the mashed bananas until evenly combined.
  4. Add the self-rising flour and stir just until combined, stopping when no dry flour remains.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake until golden and a toothpick comes out clean—30–35 minutes for a square pan or 50–60 minutes for a loaf pan.
  7. Cool the bread for 10 minutes before slicing, then serve.

Notes

For the smoothest, cakey texture, mash the bananas thoroughly and stop mixing as soon as no dry flour remains. Store covered in the refrigerator for up to 4 days; rewarm slices in the microwave for 10–20 seconds. Freezing is yes—wrap tightly and freeze up to 3 months. Dietary swap: use all-purpose flour with baking powder and salt (1.5 cups flour + 2.25 tsp baking powder + 3/4 tsp salt) if you don’t have self-rising flour.
