Method
Brown the butter
- Brown the butter in a light-colored saucepan over medium heat, swirling frequently, until the milk solids turn golden brown and smell nutty; remove from heat and cool 10 minutes.
Make the batter
- Preheat the oven to 350°F and grease a 9x5 loaf pan.
- Whisk cooled browned butter and brown sugar together until smooth, then whisk in eggs and vanilla.
- Stir in mashed bananas until fully combined.
- Fold in flour, baking soda, cinnamon, and salt until just combined, then fold in any mix-ins.
Bake
- Pour the batter into the pan and bake for 60–70 minutes until the top is deeply golden and a toothpick comes out clean.
Notes
For the deepest nutty flavor, use a light-colored saucepan so you can pull the butter right when the solids are golden brown, not dark. Store airtight at room temperature up to 3 days or refrigerate up to 5 days; reheat slices in the microwave for 10–15 seconds. Freezing is yes—wrap and freeze up to 2 months, then thaw overnight. For a dairy-free swap, replace the butter with a 1:1 plant-based butter that browns well (it may not deepen as much, but the banana bread still bakes up moist).
