Browned butter and sweetness
  • 0.5 cup unsalted butter Brown until golden and nutty; then cool for 10 minutes before mixing.

Wet ingredients

Method
 

Brown the butter
  1. Brown the butter in a light-colored saucepan over medium heat, swirling frequently, until the milk solids turn golden brown and smell nutty; remove from heat and cool 10 minutes.
Make the batter
  1. Preheat the oven to 350°F and grease a 9x5 loaf pan.
  2. Whisk cooled browned butter and brown sugar together until smooth, then whisk in eggs and vanilla.
  3. Stir in mashed bananas until fully combined.
  4. Fold in flour, baking soda, cinnamon, and salt until just combined, then fold in any mix-ins.
Bake
  1. Pour the batter into the pan and bake for 60–70 minutes until the top is deeply golden and a toothpick comes out clean.

Notes

For the deepest nutty flavor, use a light-colored saucepan so you can pull the butter right when the solids are golden brown, not dark. Store airtight at room temperature up to 3 days or refrigerate up to 5 days; reheat slices in the microwave for 10–15 seconds. Freezing is yes—wrap and freeze up to 2 months, then thaw overnight. For a dairy-free swap, replace the butter with a 1:1 plant-based butter that browns well (it may not deepen as much, but the banana bread still bakes up moist).
