Sauté aromatics
- Heat olive oil in a large pot over medium heat, then sauté the onion for 5 minutes until softened and translucent, stirring occasionally (visual cue: gentle browning at the edges).
- Add the garlic and chopped sage and cook for 2 minutes, stirring constantly to keep it fragrant but not browned (visual cue: aromatic bubbles around the garlic).
Simmer squash
- Add the cubed butternut squash and broth, then bring to a boil over high heat (visual cue: rapid bubbling across the surface).
- Reduce to a simmer and cook for 20 minutes until the squash is very tender when pierced (visual cue: cubes collapse easily with a fork).
Blend smooth
- Blend the mixture completely smooth with an immersion blender until silky (visual cue: no visible squash chunks and a uniform golden-orange color).
Make it creamy
- Stir in the heavy cream, grated parmesan, nutmeg, and red pepper flakes, then simmer for 5 minutes (visual cue: sauce thickens slightly and looks glossy).
Toss pasta and season
- Cook the rigatoni or penne according to package directions, then toss it into the sauce and loosen with pasta water as needed (visual cue: sauce coats the pasta evenly and clings).
- Season with salt and pepper to taste, then serve right away (visual cue: flavor is balanced and the sauce looks smooth and cohesive).
Notes
For ultra-silky texture, blend right after simmering while the squash is hot and soft; if it seems too thick, loosen with extra pasta water by the tablespoon. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat gently on the stove with a splash of water or broth. Freezing is not ideal because cream can separate after thawing, but you can freeze without the cream and add it when reheating. Dietary swap: use all vegetable broth and skip chicken broth for a vegetarian version.
