Method

Make the spiced apple filling
  1. Cook the diced apples with butter, brown sugar, cinnamon, nutmeg, and cornstarch over medium heat for 5-7 minutes until thickened.
  2. Cool the apple filling completely before assembling the bombs.

  2. Separate the biscuits and flatten each into a 4-inch circle.
  3. Place 1 tablespoon apple filling and 1 caramel candy in the center of each circle.
  4. Wrap the dough around the filling and pinch firmly to seal, then roll into a smooth ball.
Coat, bake, and serve
  1. Brush each bomb with melted butter, then roll in cinnamon sugar to coat.
  2. Bake for 18-20 minutes until deeply golden.
  3. Drizzle with caramel sauce and serve warm.

Notes

Pro tip: make sure the apple filling is fully cool before filling the dough so the caramelized juices don’t leak during baking. Store leftovers in an airtight container in the refrigerator up to 3 days; rewarm at 300F for 8-10 minutes. Freezing: freeze assembled, unbaked bombs on a tray, then bake straight from frozen (add ~5 minutes). For a lighter option, swap to reduced-fat caramel candies and use unsalted butter sparingly while keeping the filling method the same.
