Firecracker beef is a spicy ground beef stir fry coated in a sweet, sticky firecracker sauce and caramelized to crispy-edged perfection. Serve it over fluffy white rice for a glossy, deep-red sweet-spicy beef bowl with a punch of red pepper flakes.

Ingredients
  

Ground beef and aromatics
  • 1.5 lb ground beef Use 80–85% lean for best caramelized edges.
  • 4 garlic Minced.
  • 1 tsp ginger Grated.
  • 1 tbsp vegetable oil For searing the beef.
Firecracker sauce
  • 3 tbsp sriracha Adjust to taste for heat level.
  • 3 tbsp honey For sweet stickiness.
  • 2 tbsp soy sauce Adds savory depth.
  • 1 tbsp rice vinegar Brightens the sauce.
  • 1 tbsp brown sugar Helps caramelize.
  • 1 tsp sesame oil To finish the sauce.
  • 0.5 tsp red pepper flakes For visible heat and texture.
Serving and garnish
  • 1 steamed white rice for serving Cooked and hot.
  • 1 green onions and sesame seeds for garnish Use generously.

Method
 

Make the firecracker sauce
  1. Whisk together sriracha, honey, soy sauce, rice vinegar, brown sugar, sesame oil, and red pepper flakes until smooth, then set aside.
Brown and caramelize the beef
  1. Heat vegetable oil in a large skillet over high heat, then add ground beef and cook while breaking it apart until browned with crispy edges, 6–10 minutes; drain excess fat.
  2. Add garlic and ginger and cook for 30 seconds, stirring to prevent burning.
  3. Pour firecracker sauce over the beef and toss to coat, then cook 2–3 minutes until the sauce reduces and caramelizes around the beef.
Serve
  1. Serve the caramelized firecracker beef over steamed white rice.
  2. Garnish generously with green onions and sesame seeds.

Notes

For extra caramelized edges, avoid crowding the skillet and let the beef sit briefly between stirs before breaking it up again. Refrigerate leftovers in an airtight container up to 3 days; reheat in a skillet until hot. Freezing is not recommended because the glossy sauce can change texture. For a lighter option, use leaner ground turkey in the same method for a similar sweet-spicy bowl.
