Ingredients

Fresh green beans
  • 1.5 lb fresh green beans, trimmed
Bacon
  • 8 slices bacon, halved crosswise
Butter
  • 0.25 cup butter, melted
Brown sugar
  • 0.333 cup brown sugar
Garlic
  • 2 cloves garlic, minced
Soy sauce
  • 1 tbsp soy sauce
Black pepper
  • 0.25 tsp black pepper

Equipment

  • 1 sheet pan

Method

Blanch and prep
  1. Preheat oven to 400F. Blanch green beans in boiling water for 3 minutes, then plunge into ice water and drain.
Bundle and glaze
  1. Gather 8-10 beans into a bundle and wrap with a half slice of bacon, keeping the seam-side down in a baking dish.
  2. Whisk melted butter, brown sugar, garlic, soy sauce, and black pepper until smooth and evenly combined.
  3. Pour the glaze evenly over the bundles so the bacon is coated and the surface looks glossy.
Bake and finish
  1. Bake at 400F for 25-30 minutes, until bacon is crisp and the glaze is bubbly.
  2. Spoon the pan glaze over the bundles and serve warm.

Notes

Pro tip: after blanching, drain well so the glaze can cling instead of pooling. Store leftovers covered in the refrigerator for up to 3 days; rewarm in a 350F oven until hot and lightly re-bubbled. Freezing isn’t recommended because the bacon texture softens when thawed. For a lower-sodium swap, use reduced-sodium soy sauce while keeping the same glaze method.
