Prep and preheat
- Preheat the oven to 350°F and grease a 9x5 loaf pan and dust with flour, so the loaf releases cleanly after baking.
Cream the base
- Beat butter and sugar together until light and fluffy, about 3–4 minutes, scraping the sides as needed for a smoother batter.
Add eggs and flavor
- Add eggs one at a time, beating after each, then mix in vanilla and sour cream until the batter looks uniform.
Add bananas
- Stir in mashed bananas until combined, keeping the batter thick and cohesive.
Combine dry ingredients

Pro tip: toast the walnuts until fragrant and press the whole halves firmly down the center so they stay visible on the caramelized top. Store tightly wrapped at room temperature for up to 3 days or refrigerate for up to 5 days; freeze slices for up to 3 months (thaw overnight in the fridge). For a dairy-light swap, use plain low-fat Greek yogurt in place of sour cream for similar moisture.
