Cook the filling
- Preheat oven to 350°F.
- Sauté bell pepper, onion, and mushrooms in butter over medium-high heat for 5 minutes until softened, then let cool slightly.
Assemble the stuffed loaf
- Mix meatloaf ingredients until combined.
- Press half into a loaf pan.
- Layer provolone slices over the beef, then top with sautéed vegetables.
- Press remaining meat mixture over the top to seal completely.
Bake and rest
- Mix glaze ingredients and brush over the top.
- Bake 55–65 minutes until internal temperature reaches 160°F.
- Rest 10 minutes before slicing.
Notes
Pro tip: cool the sautéed vegetables for a few minutes so the filling doesn’t steam and loosen the seal. Refrigerate leftovers in an airtight container for up to 3 days; reheat in the oven or microwave until hot. Freeze cooked slices for up to 2 months if wrapped well. For a lighter option, swap half the ground beef for lean ground turkey (use the same seasoning and bake time, aiming for 160°F).
