Ingredients

Fruit filling
  • 3 apples
  • 3 pears
  • 0.3333333333 cup granulated sugar
  • 2 tbsp brown sugar
  • 1.5 tsp cinnamon
  • 0.25 tsp ginger
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
Walnut crumble topping
  • 1 cup rolled oats
  • 0.75 cup all-purpose flour
  • 0.75 cup brown sugar packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 1 cup walnuts roughly chopped
  • 0.75 cup unsalted butter cold, cubed

Equipment

  • 1 sheet pan
  • 1 9x13 baking dish

Method

Prepare and bake
  1. Preheat the oven to 375F, and grease a 9x13 baking dish.
  2. Toss the apple and pear slices with granulated sugar, brown sugar, cinnamon, ginger, cornstarch, and lemon juice, then spread the fruit in the dish.
  3. Combine rolled oats, all-purpose flour, packed brown sugar, cinnamon, salt, and chopped walnuts, then cut in the cold cubed butter until chunky clumps form.
  4. Scatter the walnut crumble over the fruit, then bake for 40-45 minutes until deeply golden and fruit is bubbling.
  5. Rest the crisp for 10 minutes before serving so the filling sets and the topping stays crisp.

Notes

Pro tip: cut the cold butter into the dry mixture until you see pebble-like clumps—this is what gives the topping that crunchy, craggy texture. Store leftovers covered in the refrigerator for up to 4 days; rewarm at 350F for 10 minutes. Freezing is not recommended because the crumble texture softens after thawing. If you need a dairy-free version, use a 1:1 cold dairy-free butter substitute for the crumble and keep the same baking time.
